How it's made and what it tastes like
Roasted coffee, usually blended with 10–20 percent chicory, is packed into the upper chamber of a two-part metal filter. Boiling water is poured over it and left to drip for several minutes into the lower chamber. The resulting decoction is dark and intense.
Hot milk and sugar are added, and the mix is pulled between tumbler and dabarah from a height to cool it and build froth. The flavour is bold and slightly bitter with a caramelised sweetness and a distinct chicory depth that separates it from espresso-based coffee.
