How it's made and what it tastes like
Slightly sour, day-old dosa batter is tempered with mustard seeds, chopped onion, green chilli, ginger, curry leaves and sometimes grated coconut. The mixture is spooned into a paniyaram pan, each cavity given a few drops of gingelly oil, and the balls are flipped once they set.
Each piece has a thin crackly crust that gives way to a moist, tangy centre studded with onion. It is eaten with coconut chutney or a coarse tomato-chilli chutney.
